Hi Everyone and welcome to another blog post of mine!
Today I am going to teach you how to make soup for couscous as well as how to make couscous from semolina in the microwave, in under 15 minutes!

Soup Ingredients: - 2-3 tbsp Olive oil - 3-4 celery stick - 1-2 cups cooked Chickpeas - 1 medium Onion - 4 Potatoes - 4 Carrots - 3 Zucchinis - 1/2 of a Cabbage - Celery leaves - 2 tsp Turmeric powder - 1 tsp sweet paprika - Salt & Pepper to taste
Soup Method: Chop your vegetables very roughly. In a very large pot place some olive oil and sauté the onions and celery sticks until the onion is translucent. Then add the vegetables one after the other, mix well all the ingredients after each ingredient you add so all the vegetables will get a coating of the oil. Finally place the cabbage on top add the seasonings and cover with water. Place the lid on the soup and cook for 30-40 minutes or until the vegetables are tender.
Couscous Ingredients: - 2 cups Semolina - 1 tsp salt - 1/4 cup oil (I used sunflower) - 2 cups of the soup we made (or water if you want... But I recommend the soup because it adds a lot of flavor to the couscous)
Couscous Method: (Microwave) In a bowl that can go into the microwave, add all the ingredients and mix well. Cover with a plate (you can also use a pyrex with a lid if you have it) Place in the microwave for 4 minutes. Then remove from the microwave and break the couscous apart with a fork (fluff it). Place back in the microwave for 3.5-4 minutes, remove and let cool. Once the couscous has cooled a little and you can touch it with your hands, move it to a sieve over a large bowl, and start breaking it apart with your hands. (You can also use a food processor and then move it through a sieve). And that is it, the couscous is done, it usually served with the vegetables from the couscous soup and some of the liquid itself. Couscous Method: (Stovetop) Bring to a boil all the ingredients except for the semolina, then add the semolina, while constantly stirring. Cover with a lid and cook for 15-20 minutes or until all the water has been absorbed, make sure not to open a lot the pot. Once the water has been absorbed let the couscous cool a little, move it to a sieve over a large bowl, and start breaking it apart with your hands. (You can also use a food processor and then move it through a sieve). And that is it, the couscous is done, it usually served with the vegetables from the couscous soup and some of the liquid itself. ENJOY! :)
